For over 25 years, Fay Bailey-Gregory has been actively involved in the food industry. She has held the positions of Food and Beverage Manager, Restaurant Manager, and Food Inspector to name a few. At the highest level of standard governance for Jamaica, the Bureau of Standards, Mrs. Bailey-Gregory exceled as the leader of the Inspectorate Division. She served this esteemed agency in many capacities for over 17 years.
Mrs. Bailey Gregory was very instrumental in recommending food factories to be exempted from the sections of the processed Food Act administered by the Bureau of Standards Jamaica. The program ensures that companies applied HACCP principles.
Mrs. Gregory holds a degree in Hotel and Restaurant Management from the University of Technology, and an Executive Masters in Business Administration from Florida International University (FIU). Additionally, she has benefited from extensive training at the Better Process Control School, of the University of the West Indies, ISO and many others.
She is trained and experienced in ISO 9001 auditing and implementation, ISO 22000, and ISO 31000 (Risk Manager). Mrs. Bailey Gregory is a certified Professional Evaluation and Certification Board (PECB) Trainer and presently works as a Consultant in Management and Food Safety Systems. She is presently contracted as staff auditor for a prominent certification body in the United States of America. Here she provides auditing services and consultancy services in Safe Quality Foods (SQF) and United States Food Safety Modernization Act (USFSMA).
Having been trained in HACCP – Hazard Analysis Critical Control Point – Mrs. Gregory is frequently called upon to present on this and several other areas of food safety.
Shirnett Bailey has more than fifteen years experience as an executive in Healthcare Insurance Sales, Talent Acquisition, Networking, “Match Maker”and Business Development, Contracts Acquisitions, Project Management, Compliance, and Training. She has exceptional skills in building and nurturing relationships, resulting in long term and repeat business.
Miss Bailey effectively lead teams through understanding and appreciating the valve of individual input. Her passion is effecting sustainable growth of companies and individuals through servant leadership and a hands on total quality approach.
Within the healthcare staffing industry Ms. Bailey has played the key role in the strategic sourcing, recruitment and staffing of Healthcare professionals nationally. Through diligence, drive and a keen initiative she as developed a comprehensive and targeted recruitment model for sourcing and hiring the best fit healthcare professionals; integrating one company’s proprietary marketing system, RIMS, with her own professional expertise in the area of recruitment, selection, and management. From facilitating the abstracting quality and output of other healthcare professionals, to the coaching of master-level customer service delivery, Ms. Bailey has a successful track record in building and leading teams nationwide stems from a high level of understanding and appreciation for servant leadership.

VP of Operations
With over fifteen (15) years of experience in the food service industry, Joan has served in many roles, ranging from restaurant general manager in charge of one unit, to District Manager in charge of ten (10) units to presently overseeing thirty (30) Multinational Units throughout the country.
Joan is a certified Food Safety Manager, as well as an Instructor and proctor with the National Restaurant Association. She currently develops and overseas compliance of all the food safety regulation, policies, and procedures for a major restaurant brand in Florida. Here she also develops, implement and maintain security and food safety standards.
Areas of expertise include: Developing and training, as well as providing guidance in maintaining food safety and quality requirements in the hospitality industry. Documentation development expertise includes but not limited to SOPs, sanitation, HACCP and quality manuals.
She is an experience food preparation safety auditor as well as an advisor in the management of third party audits when required.
Jennifer A. Aquart
Jennifer has been actively involved in the food industry for over 25 years. She graduated from the University of the West Indies with an Honors degree in Life Sciences specializing in Entomology (study of insects) and Plant Pathology. She immediately applied this training as a Stored Food Product Entomologist with the Jamaican Government in identifying Stored Product Pests and recommend treatments to protect the integrity of stored food products.
After 8 years in this field she moved on to the Bureau of Standards Jamaica where she gained invaluable training and experience as a Food Inspector particularly of Low-Acid Canned Foods, Acidified Foods, Meats and Fish.
Jennifer was instrumental in developing protocols, procedures and forms to assist and guide food processors in attaining and maintaining the safety of foods in their establishments and products. She helped to develop and implement the HACCP-based protocol through which food processors could be exempted from some burden-some sections of the Processed Food Act.
Being a trained and certified Lead Auditor and HACCP Manager as well as being trained and certified in ISO 9001 and ISO 22000, Jennifer has been involved in training Food Inspectors and Food Processors in the implementation and auditing of HACCP-based food safety systems.
After 17 years with the Bureau of Standards rising to the rank of Team Leader of the Inspectorate, Jennifer left to join her family in Canada. In her new home, she continues working in the field of food safety … her passion.
She is presently working as a Staff Auditor with a USA-based international Consulting and Auditing organization with clients across Canada.
Merle A. E. Donaldson
Merle Donaldson has over twenty years of experience in both the public and private sectors in the areas of research, business development, project management, quality systems and conformity assessments. She holds an MBA in International Business and B.Sc. in Chemistry and Management from the University of the West Indies and a Postgraduate Diploma in Education and Training from the Vocational Training and Development Institute. She currently serves as Director on the Boards of the Culture, Health, Arts, Sports and Education (CHASE) Fund, the Planning Institute of Jamaica and the Agro Invest Corporation. Merle is a results-driven professional with a proven track record of getting things done; she remains focused on positive transformation for maximum impact.
